The richness of what remains
Cuisine
At the Cristalino Wilderness Camp, the kitchen begins with fire and follows the rhythms of the forest. The luxury lies in the simplicity of the gestures, in the harmony between refinement and nature, and in respect for the ingredients and their cycles. Dinners prepared at the moquém (grill) or in the charcoal-fired oven, bring to the table the flavors of a gentle, joyful, flexible and creative Brazil.
The kitchen celebrates regional ingredients, harvested in the garden, and traditional techniques, shaped by the rhythms of the forest. But perhaps the luxury also lies in what is unspoken: a laugh that lingers, a gaze that meets another, something special that is shared and transforms.
UNDER THE AMAZONIAN SKY
Dinner at the Cristalino Wilderness Camp offers a sensory experience centered on flavors, scenery and conversations. Served in five courses, it celebrates regional ingredients and wood-fire-cooking techniques. At night, wicker lamps and hanging lights create an elegant atmosphere, while the forest appears in nuances of shadow and light.
THE TABLE CELEBRATES
The gastronomy is conceived with sensitivity and care. For children, the menu adapts flavors and preparations without losing its Amazonian identity, making discovery easy and fun. The Cristalino Wilderness Camp also creates special moments for birthdays, marriage proposals and other celebrations. In the dim light of the Social Tent or under the trees around the open fire, sharing the table takes on an air of lightness, turning gatherings into stories lived at the pace of the forest and retained in the memory.
OVER THE EMBERS
Cooking over embers is an ancient art, tied to the origins of humanity. At the Cristalino Wilderness Camp, the fire restores to meals their essential meaning: cooking, sharing and being present. Prepared in front of the guests, the experience brings together smoky aromas from the moquém (grill) or the charcoal-fired oven, amid soft lighting and the sounds of the forest. The wine list and carefully crafted drinks complete the experience in a welcoming atmosphere.
ORIGINS
Tucupi (fermented cassava broth), beiju de mandioca (cassava pancake), Brazil nuts, puxuri (Amazonian nutmeg), bacuri (Amazonian fruit), açaà (acai berry) and forest herbs translate the Amazon's rich culinary heritage into a cuisine that is guided by research and the flavors of Brazil. Freshwater fish, such as the huge pirarucu, add traditional Amazonian flavors. Ingredients from the hotel's agroforestry, from organic producers and regional communities, along with an enormous variety of native fruits, complete the preparations, according to the season.
ABOUT THE CHEF
Recognized as one of the leading names in contemporary gastronomy, chef Fabio Vieira finds in the Amazon a field of continuous discovery. With experience in starred restaurants, he develops a cuisine guided by research and intimacy with Brazilian ingredients. At the Cristalino, his creations range from the flavors to the design of the ceramic pieces, made especially to accompany his dishes.
"Cooking at the Cristalino Wilderness Camp is keeping alive a Brazil that is gentle, without excesses and full of identity. I enjoy showing the power of Amazonian ingredients in different forms, respecting their delicacy, their timing and the atmosphere of kinship that is born in the kitchen, in the heart of the forest."
